He sells them to me dirt cheap (like $0.75/lb for veal shanks). He usually throws in a few extra bones for the dog. So, I roast the bones I need to roast for stock and then, after I transfer them into the stock pot, I roast the extras for my dog, Gumbeaux. I usually give him one (once they cool off of course) and I wrap the rest in foil and put them in the freezer. Then I give him a new one every few days.
