Take Spain as a different system, they will still be polite and the service still good but unless you are a regular, they dont engage in chit chat but if they want a tip, the service better be bloody good and even then, they arent getting anything like 10% of the bill. In Ireland, where I originate, we will tip 10% for really good service but its absolutely optional and again, you work for it not in fake smiles but in good service. I dont care if you smile, it has no bearing on my experience.
